Speaker Bio:
Mark has over 32 years’ experience in industry and environmental consultancy. He has extensive and wide-ranging experience of waste prevention (audit and implementation support) across the food and drink and hospitality sectors. He is experienced in both policy work, designing and assessing the potential impacts of waste prevention initiatives, and operational studies, working directly with Small and Medium Sized Enterprises (SMEs) to help reduce waste.
Recent project experience includes three years leading the team delivering technical support to signatories for the UK Waste Resource Action Programme (WRAP) Hospitality and Food Service Agreement. Mark and his team provided assistance to hotels, pub chains, and contract catering companies in meeting waste prevention and recycling targets. This involved overseeing smart waste monitoring food waste trials, the development of case studies and the preparation of the guidance documents on food and packaging waste monitoring and reducing food waste in hospitality events. As technical director for the Greenbusiness Ireland programme from 2008 to 2012, Mark led waste prevention work for hundreds of SME hospitality businesses including hotels. The work included site resource efficiency audits, workshops and the development of case studies, and resulted in estimated savings of €8 million per annum for businesses. Mark also worked with WRAP on developing workshops for waste prevention in tourism businesses, undertaking the data analysis for the project, and led the Waste Prevention Planning and Delivery course for WRAP.
